IIf you’re a fan of corn on the cob, this hot honey-glazed version of Mexican street corn is going to blow your mind. It’s sweet, spicy, creamy, and packed with bold flavor. Perfect for cookouts, BBQs, or a fun twist on a summer side dish.
Why I Love This Recipe
Hot honey has been the trending flavor of the year, and after trying it in several dishes — from bacon-wrapped bites to BBQ glazes — I knew I had to pair it with elotes. The combo of charred corn, creamy lime sauce, and sweet heat from the hot honey is just next-level.
This one’s a crowd-pleaser and super easy to make. Once you try it, don’t be surprised if it becomes a regular on your cookout menu.
Minimal Prep, Big Flavor
Start by shucking your corn. If you have wooden skewers, insert them into the base of each cob to create a handle — this makes glazing and serving easier later on.

Creamy Sauce and Glaze
While the corn grills, mix up the creamy sauce. Combine sour cream (or Greek yogurt for a lighter twist), mayo, lime juice, chopped cilantro, garlic, smoked paprika, and chili powder in a bowl. Set aside.
In another bowl, crumble your cotija cheese.

Once the corn is off the grill and still hot:
- Use a BBQ brush to coat all sides of each ear with hot honey.
- Spread the creamy sauce over each ear, turning to coat evenly.
- Sprinkle with crumbled cotija cheese.
- Optional: Add a few extra dashes of chili powder or chopped cilantro for garnish.
- Serve warm and enjoy!
Final Thoughts
This recipe is all about bold flavor with simple steps. A few quick tips:
- Get the char: Don’t be afraid of a little blackening — it adds great smoky depth.
- Use skewers: They make applying toppings easier (and less messy).
- Lighten it up: Sub in Greek yogurt and light mayo for fewer calories — still delicious.
- Flavor variations: Want to try something different? A drizzle of chili crisp or a shake of tajin can take this in a new direction.
It’s easy, fast, and incredibly flavorful. I’m already dreaming about making it again.
🔥 So fire up the pit, and let’s grill and chill.
