Hot Honey Glazed Mexican Street Corn (Sweet, Spicy & Irresistible)

Ingredients
  

  • 8 ears Corn
  • 1/2 cup Sour Cream (or greek yogurt for a lighter version)
  • 1/2 cup Mayonaise (or light mayo for a lighter version)
  • 1/4 cup Cilantro (chopped)
  • 1 tsp Garlic (minced)
  • 1/8 tsp Smoked Paprika
  • 1/8 tsp Chili Powder
  • 2 tbsp Lime Juice
  • 1/4 cup Hot Honey
  • 1/2 cup Cotija Cheese (crumbled)

Instructions
 

  • Preheat grill to 400°F (medium heat).
  • In a bowl, whisk together sour cream, mayo, cilantro, garlic, paprika, chili powder, and lime juice; set aside.
    1/2 cup Sour Cream, 1/2 cup Mayonaise, 1/4 cup Cilantro, 1 tsp Garlic, 1/8 tsp Smoked Paprika, 1/8 tsp Chili Powder, 2 tbsp Lime Juice
  • Place corn directly on grill grates and cook for about 3 minutes per side until slightly charred.
    8 ears Corn
  • Remove corn from grill and place on a plate.
  • Brush each ear of corn with hot honey on all sides.
    1/4 cup Hot Honey
  • Brush mayo-sour cream mixture over each ear, coating evenly.
  • Sprinkle with crumbled cotija cheese.
    1/2 cup Cotija Cheese
