- 5 lb Pork Loin (weight doesn't hav to be exact)
- 1 cup Creole Butter (optional, for injection)
- 1/2 cup Rub Some Butt Carolina Style Seasoning (or your favorite pork rub)
Preheat smoker to 225°F using hickory or fruit wood.
Trim excess fat and silver skin from pork loin.
5 lb Pork Loin
Slice the pork loin in half lengthwise to reduce cook time and improve smoke penetration.
(Optional) Inject creole butter into pork loin in a checkerboard pattern about 1–2 inches apart.
1 cup Creole Butter
Coat all sides of pork loin generously with rub.
1/2 cup Rub Some Butt Carolina Style Seasoning
Place pork loin on smoker over indirect heat.
Smoke until internal temperature reaches 145°F (approximately 2 hours).
Remove pork loin from smoker and let rest for 15 minutes.
